Ingredients
  

  • 1/4 cup olive oil
  • 3/4 cup sugar
  • 1 large egg
  • 1/2 cup plain yogurt
  • 1/2 cup mashed banana
  • 1 tsp vanilla
  • 1 cup all purpose gluten free flour or regular flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp cinnamon

Buttercream Icing

  • 1/2 cup salted butter softened
  • 2 tsp vanilla extract
  • 2 cups confectioners sugar sifted
  • 2 tbsp milk

Instructions
 

  • Preheat the oven to 350° and line an 8x8 pan with parchment paper.
  • In a large bowl, whisk together the olive oil, sugar, and egg. Add in the vanilla, banana and yogurt and mix until just combined.
  • In a medium bowl, whisk together the flour, baking soda, salt and cinnamon.
  • Combine the wet and dry ingredients and mix until just combined. Spread batter evenly in the baking pan.
  • Bake for 25-28 minutes.

Buttercream Icing

  • Beat the butter in an electric mixer until smooth and creamy. Add in the vanilla. Slowly add in the confectioners sugar and mix until well combined. Add in 1 tbsp of milk at a time.
