Chewy No Bake Granola Bars

Ingredients

  • 2.5 cups rolled oats
  • 3/4 cup sunflower seeds
  • 1/2 cup dried cranberries
  • 1/2 cup mini chocolate chips
  • 1 cup sunflower seed butter
  • 1/2 cup maple syrup
  • 1/2 tsp salt
  • 1 tsp vanilla

Instructions

  • In a large bowl mix together the oats, sunflower seeds, cranberries, chocolate chips, and salt.
  • In a small bowl, mix the maple syrup, sunflower seed butter and vanilla together.
  • Pour the wet ingredients into the dry ingredients and mix well. You want to make sure there are no dry spots.
  • Line a 6x10 baking pan with parchment paper. Or use an 8x8 pan. Press the granola bar mixture into the pan.
  • Chill the granola bars for at least an hour in the fridge. Remove them from the pan and cut into bars using a very sharp knife.

Notes

When pressing the granola bar mixture into the pan, use a piece of parchment paper between the granola bar mixture and the utensil. This will prevent sticking! 
You can even use the bottom of a drinking glass to press the mixture down.
