Ingredients

  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 cup diced yellow onion
  • 5 garlic cloves minced or pressed
  • 1 28oz can of diced tomatoes with juices
  • 1 5.5oz can tomato paste
  • 2 tsp oregano
  • 2 tbsp capers
  • 1/2 cup halved kalamata olives
  • 1/4 tsp dried chili flakes
  • 1-2 tsp sea salt
  • 1 lb pasta of choice
  • feta or parmesan for garnish optional

Instructions

  • In a large dutch oven or heavy bottomed pot, heat the olive oil over medium heat. Brown the ground beef until it's almost all cooked through. Then add in the onion and continue to cook until the beef is done and the onion is translucent.
  • Add the garlic and the oregano to the beef mixture and cook until fragrant. This takes about one minute. Pour in the tomatoes with their juices, and the tomato paste. Mix until well combined.
  • Bring the sauce to a low simmer and add in the capers, olives, chilli flakes and salt. Simmer on low for 15 minutes.
  • While the sauce is simmering, cook your pasta according to the directions.
  • Once the sauce is done, test and adjust salt if needed.
  • Serve over the cooked pasta right away and sprinkle on some feta or parmesan!

Notes

If your tomatoes have added salt, use less salt.
