Double Chocolate Zucchini Muffins

Ingredients
  

  • 1/2 cup olive oil
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1.5 cups shredded zucchini don't strain
  • 1 1/4 cups flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat the oven to 350° and line a muffin tin with paper cups.
  • In a large bowl, whisk together the oil and maple syrup. Now whisk in the eggs.
  • Add in the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon. Mix until well combined.
  • Fold in the zucchini and then the chocolate chips.
  • Scoop evenly into 12 muffin cups.
  • Bake for 18-22 minutes or until a toothpick comes out clean.

Notes

To make these muffins gluten free, use Bobs Red Mill Gluten Free Flour!
If you don't have maple syrup, honey can be used as well. 
To make these dairy free, use dark chocolate chips
