Funfetti Sugar Cookies

Ingredients
  

  • 1/2 cup melted butter
  • 1 cup white sugar
  • 1 large egg
  • 1.5 cups all purpose flour or gluten free all purpose flour
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sprinkles

Instructions
 

  • In a large bowl, whisk together the flour, baking soda and salt.
  • In a separate bowl, mix together the butter and sugar until well combined. Add in the egg and vanilla and mix well.
  • Add the wet ingredients to the dry ingredients and mix well. Now fold in the sprinkles.
  • Chill the cookie dough for 20-30 minutes. Preheat the oven to 375° and line two baking sheets with parchment paper.
  • Scoop the cookie dough into balls of about 1.5 tbsp worht of dough. Place the dough balls 2" apart on a baking sheet. With your hand, flatten the balls slightly.
  • Bake in the oven for 10-12 minutes. Let the cookies cool on the baking sheet for two minutes and then remove from the pan and transfer to a wire rack to continue cooling.

Notes

These cookies freeze well. 
  • If making gluten-free, make sure the sprinkles are also gluten-free.
