This isn’t just a plain and simple grilled cheese, it has two different cheeses in it. Now, move over avocado toast, here comes an avocado and Boursin grilled cheese sandwich!

Ingredients
- Bread – Any type of bread will do here. I used a fluffy whole wheat bread. Sourdough would be incredibly delicious as well.
- Mayonnaise – Not much is used, but it brings up the flavour of this sandwich. If you don’t like mayo, you can easily skip it.
- Boursin Cheese – I used the herb and garlic type. You could play around with this and pick a cheese based on what you prefer.
- Havarti Cheese – This adds another layer of delicious flavour. Mozzarella would work really well here too.
- Avocado – Make sure it’s ripe, and use as much as you like. I used half an avocado on this sandwich.
- Salted Butter – Just a little bit on the outside of the bread makes for a delicious crispy and golden sandwich.
