This simple and healthy salad recipe won’t take long to whip up. Start with the candied pecans.
Line a plate with parchment paper. Heat a large skillet over medium heat. Toast the pecans until they start to smell fragrant. Now pour in the maple syrup and using a spatula, stir the pecans. Keep stirring otherwise the pecans may burn. Stir them until they are all coated in maple syrup and they stick together. Once this happen, transfer them to the parchment paper and spread out to cool while you prepare the rest of the salad.
For the salad dressing, mix all of the ingredients in a small jar or whisk in a small bowl. Set aside.
Once the pecans are cool, you can assemble the salad. This is best done right before you are going to eat as arugula can be sensitive to the acid in the vinegar.
Toss together the romain lettuce and the arugula. Pour on the dressing and toss the greens until everything is coated. Sprinkle on the grapes, the feta cheese and top with the pecans.
