I first made these delicious little cookie dough balls for myself as a quick snack option. I soon realized that these chocolate chip cookie dough balls were a hit with my kids. Every time I even go to make these cookie dough balls, my daughter waits ready to pounce on them! Even as I was photographing these, she was trying to steal the chocolate chip cookie dough balls right from the bowl.
The sunflower seed butter in these cookie dough balls is what holds them all together. It gives the cookie dough balls a soft texture and adds a punch of protein and healthy fats too. The cookie dough balls are sweetened slightly with maple syrup and the added chocolate chips too. These cookie dough balls work well with dark chocolate and milk chocolate chips. I personally love the dark chocolate chips.

RECIPE
Healthy Chocolate Chip Cookie Dough Balls
Yields 24.
1 cup GF quick oats
1 cup almond flour
1 heaping 1/2 c sunflower seed butter
1/4 c maple syrup
1/4 c chocolate chips
Using a mixing bowl, combine the oats, almond flour, sunflower seed butter and maple syrup together. Mix well. Depending on how running your seed butter is, you may need a tiny bit more. The dough should squish together in a ball easily.
Once combined, mix in the chocolate chips. Scoop out 1 tbsp at a time and roll into a ball. Place them on a plate or in a container. Once you have rolled each ball, place in the fridge and after they have cooled, transfer to an air tight container.
