These Vanilla Cupcakes with White Chocolate Strawberry Frosting can easily be made gluten free. For the cupcakes, use a gluten free all purpose flour such as Bobs Red Mill. This is the gluten free flour I use all the time in my kitchen. Actually, almost all of my recipes can be made gluten free with this flour.

These cupcakes are probably easier to make than you think. We start off with a delicious vanilla cupcake recipe, and then we make the frosting. The frosting is the show stealer. This white chocolate strawberry frosting is incredible, and only a few ingredients.
Let’s start with making the cupcakes! Here are the ingredients you will need for these.
- Flour – All purpose of gluten free all purpose flour is needed here.
- Eggs – two large eggs are needed for this recipe!
- White sugar – 3/4 cup of white sugar gives these cupcakes their sweetness and texture.
- Olive oil – I used olive oil in this recipe, but avocado or melted coconut oil works too. Oil is nice because it keeps the cake nice and moist.
- Milk – 1/2 cup of milk is needed for this simple cupcake recipe. I used whole milk.
- Vanilla – 3 teaspoons of pure vanilla extract gives these cupcakes their flavour!
- Baking Powder – This is what gives the cupcakes their rise. Make sure your baking powder isn’t expired.
- Salt – Just a small 1/8 teaspoon of salt is needed in this recipe.
White Chocolate Strawberry Frosting Recipe!
This frosting is hands down, one of my favourites. I have never been a huge fan of plain frosting. I love additions such as white chocolate and fruit. I’ve kept this recipe as simple as possible, and for the strawberry flavour, we use fruit preserves, or jam as we call it. Read below for all that you need for this simple buttercream frosting with white chocolate and strawberry flavours!
- Butter – Softened butter is needed for this recipe.
- White chocolate – You can use white chocolate chips or a chopped up white chocolate bar. 1/2 cup is needed here.
- Icing Sugar – 2 cups of icing sugar is needed for this recipe.
- Vanilla Extract – 1 teaspoon of pure vanilla extract is used for this frosting recipe.
- Milk – 1-3 tablespoons of milk is needed. This is just used to thin the frosting if needed.

How to make these easy vanilla cupcakes with white chocolate frosting?
These simple vanilla cupcakes come together quickly and in one bowl.
Preheat the oven to 350° and line a 12 cup muffin tin with parchment cups.
In a large bowl, beat together the oil and the white sugar. Then add in the vanilla and the eggs. Beat these together for a minute and the mixture should turn a slightly lighter yellow. Slowly add in the milk, and mix on low until the cupcake batter is well combined.
Now mix together the dry ingredients, and slowly mix them into the wet batter. You don’t want to over mix this batter, but you also don’t want any lumps. Mix the wet and dry ingredients until everything is well combined.
Scoop the batter into the cupcake tin evenly. This should make 12 even cupcakes. Transfer to the oven and bake for 18-20 minutes.
How to make White Chocolate Strawberry Frosting?
As soon as you put the cupcakes in the oven, it’s time for you to melt the white chocolate chips. The reason we want to melt the chocolate chips right away is because we need them to cooke before making the frosting because otherwise the heat will melt the butter and the frosting will be too runny.
Start with melting the white chocolate chips. You can do this in either the microwave or on the stovetop. I used the stove and a double boiler to melt my chocolate. Slowly melt the white chocolate chips and then transfer to another bowl. Once the white chocolate is still melted, but cool, you can make the rest of the frosting.
Whip the white chocolate and the butter until nice and creamy and then add in the vanilla and the strawberry jam. Now slowly beat in the icing sugar 1/2 a cup at a time. If the icing seems too dry at the end, add in a tablespoon of milk to thin it out.
Once the cupcakes are completely cooled, frost them with the frosting! To add a special touch, sprinkle with sprinkles and top with a sliced strawberry!






Can I make these vanilla and strawberry cupcakes any fruit flavour?
Yes! These white chocolate strawberry cupcakes can easily be made any flavour you like. If you have blueberry jam or raspberry, or even peach, any of these would be delicious! Just substitute out the strawberry jam for any jam that you have.


Vanilla Cupcake with White Chocolate Strawberry Frosting
Ingredients
- 1 1/4 cup all purpose flour
- 1.5 tsp baking powder
- 1/8 tsp salt
- 2 large eggs
- 3/4 cup sugar
- 1/4 cup oil
- 1/2 cup whole milk
- 3 tsp vanilla
White Chocolate Strawberry Frosting
- 1/2 cup white chocolate chips
- 1/2 cup softened butter
- 2 tbsp strawberry jam
- 1 tsp vanilla
- 2 cups icing sugar
- sprinkles optional
- sliced strawberries optional
Instructions
- Preheat the oven to 350° and line a muffin tin with parchment cups. Or grease the muffin tin.
- In a large bowl or the bowl of a stand mixer, beat the oil and the sugar together. Add in the eggs and the vanilla and beat on medium speed for one minute.
- Now add in the milk and slowly beat until just combined.
- Add in the flour, baking powder and salt and mix until the batter is just combined.
- Scoop the batter evenly into the muffin tin and bake at 350° for 18-20 minutes.
White Chocolate Strawberry Frosting
- In a double boiler or the microwave, melt the chocolate chips. Don't overheat otherwise they will burn. The chocolate should be silky and runny.
- Let the chocolate cool until room temperature before mixing with the butter. You don't want the chocolate to melt the butter.
- Beat the butter and the white chocolate until well combined and then add in the vanilla and strawberry jam. Once these are well combined, slowly add in the icing sugar 1/2 a cup at a time. Do this until all the icing sugar has been mixed in.
- If the frosting seems a bit too thick, add in a tablespoon of milk to thin it out.
- Once the cupcakes are completely cooled, you can frost the cupcakes. If adding sprinkles, do this right away before the frosting dries.
