Gluten Free Banana Cardamom Bread

Making this Simple Banana Snack Cake is actually quite easy, and doesn’t take a lot of time. I have made this gluten free, but it can be made with regular all purpose flour as well. If you don’t like buttercream icing, you can leave that off and it will still be super delicious. This cake is easy and fast to make!
Ingredients to make this Simple Banana Cake with Buttercream Frosting
- Flour – Iv’e made this banana snack cake gluten free by using Bob’s Red Mill gluten free flour.
- Sugar – Brown or white sugar can be used here.
- Egg – This recipe calls for one large egg.
- Yogurt – Use full fat plain yogurt here.
- Banana – The riper the banana the better. You’ll need a half cup of banana.
- Olive Oil – Olive oil adds flavour and moisture to the cake. Another oil would work well too!
- Vanilla – Use pure vanilla extract in this recipe for the best flavour!
- Baking Soda – Make sure your baking soda is fresh!
- Salt – Sea salt is best here!
- Frosting – You will need softened salted butter, vanilla, powdered sugar and milk.If you don’t have salted butter, use regular butter and add in a pinch of salt.

How to make this Simple Banana Snack Cake
- Preheat the oven to 350° and line an 8×8 pan with parchment paper.
- In a large bowl, whisk together the oil, sugar and egg. Then add in the banana and yogurt and mix until just combined.
- In a medium bowl, whisk together all of the dry ingredients.
- Add the dry ingredients to the wet, and mix until just combined.
- Spread the batter evenly in the 8×8 pan.
- Bake for 25-28 minutes.
How to make buttercream frosting!
With an electric mixer, whip the salted butter until it’s nice and creamy. Add in the vanilla. Slowly add in the powdered sugar. Once that’s combined, add in 1 tbsp of milk at a time until you reach your desired consistency.

- 3/4 cup sugar
- 1 large egg
- 1/2 cup plain yogurt
- 1/2 cup mashed banana
- 1 tsp vanilla
- 1 cup all purpose gluten free flour or regular flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp cinnamon
Buttercream Icing
- 1/2 cup salted butter softened
- 2 tsp vanilla extract
- 2 cups confectioners sugar sifted
- 2 tbsp milk
Instructions
- Preheat the oven to 350° and line an 8×8 pan with parchment paper.
- In a large bowl, whisk together the olive oil, sugar, and egg. Add in the vanilla, banana and yogurt and mix until just combined.
- In a medium bowl, whisk together the flour, baking soda, salt and cinnamon.
- Combine the wet and dry ingredients and mix until just combined. Spread batter evenly in the baking pan.
- Bake for 25-28 minutes.
Buttercream Icing
- Beat the butter in an electric mixer until smooth and creamy. Add in the vanilla. Slowly add in the confectioners sugar and mix until well combined. Add in 1 tbsp of milk at a time.
